Soak rice in water for 6-8 Hrs and then Drain water. This will do away with the extra starch
Take a deep thick bottomed pan. Heat 1 tsp oil. Add rice and saute for 1 minute. Add 2.25 cups hot water. Turn heat to low and cover the pan for 15 minutes.
Do not wash the rice too much
BLACK RICE SALAD
Ingredients:
Black rice from OOO Farms(soak it overnight)
Bell pepper yellow finely chopped and steamed
Pomegranate
Lemon juice
Parsley and chives
Pistachios.
The mixture of olive oil and red wine or apple cider vinegar
Salt and pepper
Procedure:
Cook Black rice (black rice would need 30% more water to cook) they will turn purplish and soft once ready.
Remove them in a bowl and then add pomegranate, steamed bell peppers, pistachios, parsley, chives, lemon juice, one can also add green onions, add the mixture of olive oil and choice of vinegar and add salt & pepper to the rice and mix it well and serve the salad.
