Ever tried a degustation from native rice varieties?
The pop up at Ground Up, Pune was a beautiful small gathering where Chef Gayatri experimented with 10-12 native rice varieties to create a 9-course meal. She fermented, malted, smoked, toasted and cooked various dishes to bring out the inherent flavours of the native rice varieties with a fantastic modern twist. Starting with Krishna Black Rice porridge sourdough to Navara Red Rice Crackers in the ceviche to Malted Brown Rice Sticky Toffee. To swirl it all down was naturally fermented Toasted Rice Soda and Mixed Rice Drink.
Not only was it a feast for the eyes and senses but also a deep learning experience with Shailesh Awate from OOO Farms regaling the diners with the stories of the farmers and the tribal wisdom.
